Biodynamic wholemeal flour is used to make our organic traditional trahanas. The flour is made from durum wheat, which is cultivated here in Agia Triada, Farsala, Thessaly, and has been for three generations. It is ground in a stone mill to maintain its high quality.
Trachanas is a typical Greek product, very nutritious and healthy, made by combining flour and yogurt, here with a slightly spicy twist by the addition of organic chilli powder.
Trahanas can be enjoyed in various culinary forms and is suitable for breakfast, lunch or dinner, in both sweet and savory dishes. It is commonly served by cooking on its own in a soup and adding small pieces of butter and/or feta cheese before serving. Adding leftover meat to trahana soup towards the end of cooking is also a great way to use it up.
Additionally , trahanas can be used:
- as a substitute for rice or pasta in soups, boiled dishes, and stews
- on our trahanoto, similar to risotto
- to complement all types of meat
- as a side dish with tomatoes, eggplants, peppers, etc.
- with vegetables as a stuffing
- as a filling in pies
