Diana's bulgur salad
Ingredients:
- 1.5 cup of bulgur the trinity farm,
- 3 cups of water,
- 3 tablespoons Greek yogurt,
- 3-4 tablespoons olive oil,
- 1 onion * finely chopped,
- 1 garlic clove * chopped,
- 1 large carrot * in cubes,
- 1 chopped green pepper,
- 1 chopped red pepper,
- 1 chopped yellow pepper,
- 1 large zucchini in cubes,
- 1/2 bunch of chopped parsley,
- 1 teaspoon basil,
- salt.
How to:
- Place the bulgur in water to soak for 3 hours or until it absorbs water.
- Salt.
- Heat the oil and sauté the onion, garlic , and carrot for 5 minutes.
- Add the peppers and sauté for 4 minutes.
- Add the zucchini and sauté until relatively soft.
- Remove from heat.
- Stir in the bulgur, vegetables, parsley, basil.
- Add salt if needed.
- Garnish with yogurt and serve.
