Dry ingredients

1 cup The Trinity Farm flour of your choice

2 ts of sugar

1/2 ts baking powder

1/4 ts baking soda

1/4 ts salt

Liquid ingredients

1 cup buttermilk (*mix 1 cup of milk with 2 tbsp lemon juice or vinegar, and allow to stand for 10-15 minutes)

1 egg

2 tbsp melted butter or olive oil

How to

In a bowl, mix the dry ingredients. In another bowl, mix the liquid materials. Add the liquid mix to the dry mix, and stir the two together until just barely mixed. Don't over whisk it, you want the flour lumps to stay, else, the pancakes will be very dense. We want the mixture to be thick, not liquid.

Preheat the frying pan and grease the surface with butter. Add scoops of the pancake mix to the pan. Usually, I add 1 spoonful of mix, and a few seconds later I add 1 spoonful, on the top of the first one, so the pancakes get a bit of the height . The height gives the fluffiness .

Cook for a few minutes, until you see little bubbles forming on the surface of the pancake. Flip the pancake and cook for a couple minutes , so that if you peek underneath, the bottom would be golden brown.

Serve with fruit, agave syrup or honey!
