The Food

Legumes are a timeless foundation of the Mediterranean diet, favorite for simplicity, their nutritional value and versatility in the kitchen. They are grown on our biodynamic estate and carefully selected after harvest, expressing the character of the land and the rhythm of the seasons.

Our Collection

Lentils

Small and tender, with a rich earthy flavor and a short cooking time. Ideal for soups, salads and daily Mediterranean dishes.

Beans

Tender and filling, with a mild taste that highlights the aromatics and spices. A classic choice for soups, oven and traditional stews.

Chickpeas

With a naturally velvety texture and a pleasant nutty taste. Ideal for stews, salads, traditional recipes and homemade hummus.

The Harvest

Cultivated with care on our biodynamic estate in Thessaly, our legumes are harvested when fully ripe and naturally dried to maintain their quality and authentic flavor. They are cleaned and carefully selected, bringing the simplicity and richness of Mediterranean agriculture to the everyday kitchen.

In the Kitchen

Perfect for soups, by its addition towards the end of cooking, salads and countless traditional Mediterranean recipes. Their natural flavor combines wonderfully with olive oil, aromatic herbs and seasonal vegetables.

Proposal: Lina salad with lentils

Ingredients: 500 grams of lentils trinity farm boiled * and strained, 7-8 cherry tomatoes cut in half, 1 small bunch of chopped parsley, 5 tablespoon. olive oil , 2 tablespoon. balsamic vinegar soup, salt, black pepper, optionally: 200 grams of feta cheese into cubes.

How to: Mix all the ingredients.

Tips: 1. The salad is served warm in winter and cool in summer. 2. The salad is preserved 3-4 days in the refrigerator. 3. Boiled lentils *: wash the lentils, boil for 5 minutes, we throw the water, and boil again with enough fresh water over low heat for 1 hour.
