Cereals contain virtually all the necessary nutrients.

  1. The starch, represents the largest part of the grain, at a proportion of 60-75%. It is located in the endosperm.
  2. The high nutritional value protein, at a proportion of 7-15%, is the second highest ingredient in content. The sprout contains a lot of protein as well (oats contain 6 essential amino acids, rice, all 8). It is located in the endosperm.
  3. Unsaturated fatty acids are located mainly in the nutritional tissue. Sprout oil corresponds to about 7% of the grain.
  4. The salts are found mainly in the outer layers. Amongst them are potassium salts that strengthen the nervous system and tissue, and calcium salts that are essential for bones and teeth, and magnesium salts as well, essential ingredient for blood and tissues, believed to act as protection against cancer.
  5. There is a high trace element content, such as iron for oxygen uptake, zinc for blood formation and wound healing, fluoride to harden the enamel and fight teeth decay. Also important is the silicon acid content, that is usually high, having a positive effect on the bones, teeth, hair and skin, bone elasticity, and power of concentration. Feeds and strengthens the connective tissue, and has the same effect on the skin, hair, nails. Sufficiency is this acid is very important, especially in the early years.

  8. Most of the health benefits of cereals are sacrificed during advanced milling technology.. For, in peeled (shelled) cereals and flour, external layers and sprout are removed, and it is exactly here that most vitamins and minerals are located. Only whole grain products ensure the retention of these necessary ingredients. As insecticides penetrate the outer layers of the grain and chemical fertilizers 'distort' their contents, only organic cereals can be completely satisfactory.
